  1. Remove the bulbs’ ends while leaving the roots attached-the onions will turn green as they grow.
  2. Place the bulbs in a small jar, root end down. (I supported them in an egg cup.) Add just enough water to cover the roots, but leave the top edges dry.
  3. Keep the roots moist by placing them on a windowsill. Green shoots will emerge from the tops of the bulbs after a few days. They’ll grow very quickly after that. Move the bulbs, roots, and all, to potting soil when green shoots grow about an inch tall (about a week) and they’ve developed their first set of real leaves.

Water regularly, but don’t overdo it (you don’t want the bulbs to rot), and watch for signs of rooting: The water level in the cup should go down as roots grow. When you see roots coming out of the bottom of the bulbs, transfer them to larger pots or a garden bed.

Keep the growing tray on the windowsill and the kitchen roll moist but not wet. Water the plants two to three times per day. The roots will grow down and reach the water in the tray, which you will keep filled with tap water. Your crop should be ready to harvest in about three weeks.

There are three methods for growing microgreens. The first method is to use a special plastic tray, which is available from garden centers and seed suppliers. These are intended to make growing extremely simple. They have a shallow plastic dish filled with water and a grid that sits on top of it.
